| product characteristics | dipotassium hydrogen phosphate is also called dipotassium phosphate, the chemical formula is K2HPO4 · 3H2O, and the molecular weight is 28.22. The appearance is colorless flake or needle-like crystals or white particles. It is deliquescent, easily soluble in water (1g is about 3mL of water), the aqueous solution is weakly alkaline, the pH of 1% aqueous solution is about 9, and it is insoluble in ethanol. Density 2.33g/cm3. Potassium pyrophosphate K4P2O7 is generated after burning. Used as an analytical reagent, pharmaceutical raw material, as a buffer in the food industry, chelating agent, yeast food, emulsified salt, antioxidant synergist. China's "Hygienic Standard for the Use of Food Additives" (GB 2760-1996) stipulates that it can be used for vegetable fat powder with a maximum dosage of 19.9 g/kg.
